- 2 cups of Poha (flattened rice)
- 1 large onion, finely chopped
- 1 large potato, peeled and diced
- 1/2 cup of fresh green peas
- 1/4 cup of roasted peanuts
- 2-3 green chilies, finely chopped
- 1/2 teaspoon of mustard seeds
- 1/2 teaspoon of turmeric powder
- A pinch of asafetida (Hing)
- 8-10 curry leaves
- 2 tablespoons of vegetable oil
- Salt to taste
- Fresh coriander leaves for garnishing
- Lemon wedges (optional, for serving)
Rinse and Soak the Poha
Take the Poha in a sieve and rinse it underrunning water for a few seconds. Drain the excess water and let the Poha sitfor about 5 minutes to soften.
Prepare the Seasoning
In a pan, heat the vegetable oil on medium flame. Add the mustard seeds, and when they start crackling, add the asafetida and curry leaves. To release the scent, stir for a short while.
Sauté the Vegetables
Add the finely chopped onions, green chilies, diced potatoes, and fresh green peas to the pan. Sauté the mixture until the onions turn translucent and the potatoes are lightly cooked.
Add the Poha
With a fork, gently fluff up the wet Poha before adding it to the pan. Mix the Poha well with the sautéed vegetables to ensure even distribution of flavors.
